Minestrone Soup

  • 2 cans (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 small bag frozen mixed vegetables
  • 1 small bag shredded cabbage
  • 8 cups water
  • 1 clove garlic, minced
  • salt and pepper to taste
  • 1 1/2 cups tubular (ditalini) pasta
To Prepare:
  • Throw everything into a crockpot except the pasta.  Simmer on low heat for 6-8 hours.
  • Cook pasta separately according to box directions.
  • Add desired amount of pasta to bowl. Add hot .
  • Serve with crackers or crusty bread.
